Green Eyes

Last week, I had the pleasure to visit Bonduelle’s innovation center and taste chocolate and zucchini cake. I love chocolate. And zuccchinis. But never tried them in the same plate and it was awesome ! In fact, I never ate such a tasteful though light chocolate cake.
Great, Anthony, you had a good breakfast last week with some strange ingredients, so what ?
Well, Bonduelle wanted to demonstrate where it tends to do with its food services : bring plant-based meals in every plate by training chefs about the ability to develop well balanced yet delicious compositions. The program is called “Greenology”.
Because we have to educate the whole population about the fact that we can have a vegetarian diet and still be in good health. But we also need to educate chefs and cooks that a menu doesn’t necessary starts with a piece of meat or fish, then try to add the sides.
If we want to eliminate meat from menus, we need to see a plant-based menu as a whole. By the way, this vision is quite the opposite as players in the plant-based industry that want to replace a meat burger by a plant-based burger, thus trying to make a smooth transition.
I used to think that the plant-based burger was the best solution to educate our fine palates. I tend to slide to Bonduelle’s vision : as in all the climate topics we need to change, it’s all about new imaginaries.
Of course, Bonduelle, who sells vegetables has an interest in people, especially restaurants and cafeterias to add plants in their menus but we all need to do so, and I think it is pretty smart to use the chefs and recipes to turn people’s minds and make them think vegetables 🥦 🥕
Big Tech

I’ve been following CB Insights for a long time. In case you never heard of it, the CB Insights market intelligence platform analyzes data points on venture capital, startups, patents, partnerships and tech news. Not always perfect, because the startup ecosystem is a big ocean moving constantly, and it’s not always easy to understand what’s behind the pitch. And they also have to make some money, so who knows if they maybe have some practices inherited from Gartner…
That said, it’s a great source of information, still. With free content, paying content, and events.
